Temp guage reading lower than OBD, No fan

Hi everyone, First post but I've been scanning this forum heavily for about 6 months now since we started planning a build and have found it extremely helpful and the best source of info for this engine, so thanks to everyone first for a great forum.

Now, we fired up a Z22SE last night for the first time after a full, full rebuild with a few small mods and it started very well and ran happily, it was in a sorry state 6 months ago when it last run and had been sat for 6 years before that so very happy with it and no doubt its thanks to the forum that it got that far unhindered.

The engine is back in the 2000 Vectra B it came from, the temp gauge only seems to start at 80, when it starts to climb it reads around 10 degrees lower than what the OBD says, and when OBD gets close to 100 it boils over as you'd expect (cap removed) but the gauge is still showing high 80's and the fan hasn't come on.
I jumped the relay for the fan and it does work. With the sensor unplugged the fan doesn't come on continuously as default and OBD reads -40 degrees.

The A/C has been completely removed so the A/C fan, compressor and the sensor in the pipe behind the rad are not plugged into anything but I can't see how they would be linked.

Any ideas greatly appreciated as I don't have any previous experience with this engine.

Thanks
